[Dovecot] Does dovecot do any address checking or referring back to a server?

no - fetchmail is enough, but there is one possible reason way use
postfix/LDA - plugins; like sieve,  spam control, vocation messages etc.
otherwise actually even dovecot is not needed; if storage is local file
system it can be assessed directly by mail client.

if postfix is used and delivery is done to local file system it must be
set up as authoritative for his domain (but accepting connection only
from local host/net).  and correct  address mapping (if needed) to local
accounts must be set up.

it seems problem is incorrect "mydestintion" ...
